​Anyone you ask, "What's your favorite comfort food?"  will mention a dish from their childhood.  Fried chicken, mashed potatoes, pasta, casseroles, grilled cheese sandwiches - each one has a special place in my heart.  Growing up, I ate a lot of cheese, like way too much cheese.  Put cheese on it, and I would eat it.  Although some things have changed, mainly my vegan lifestyle, I still love cheese.  Tonight, I was literally talking about the first thing I would eat, if I decided to not be vegan.  Can you guess?  CHEEEEEEEESE.

I can already hear the naysayers, but I am ignoring them.  You CAN have vegan cheese.  No, it's not quite the real cheese you think of, but it's not like it garbage flavored poison.  There are tasty commercial vegan cheeses, and a ton of recipes for DIY.  Personally, I make my own melty cheese sauce, and it goes well with anything.  It's nutritional yeast based, and takes about a minute and a half to make.  
Steam up some broccoli, and make some twice-fried & hand-cut French fries, then top it with a generous helping of vegan cheese sauce.  You have, in front of you, a pile of perfect comfort food.  Salty, creamy, crispy, warm, filling.  With this combo, you can't go wrong.
